Meringue Surprises

2 egg whites
1 tsp vanilla
1/8 tsp salt
1/2 cup sugar
6 oz. chocolate chips

Preheat oven to 300 degrees.
Combine egg whites, vanilla and salt. Beat until stiff.
Beat in sugar gradually until stiff and satiny.
Fold in chocolate chips.
Drop by teaspoons full onto greased cookie sheets.


Bake for 30 minutes.
Makes about 18 cookies.
Eat hot out of the oven with a glass of milk. Mmmm

My mom used to make these when we were little. Hope you enjoy this simple and light dessert.
You can store them in an airtight container, but they will get a little chewy. I prefer them crunchy, right out of the oven, but my man likes them either way.
